The craft

How Papa's Honey Grappa Is Made

Nothing wasted, everything transformed. Grappa is Italy's proud digestivo, distilled from the grape skins and seeds left behind after the harvest. Papa's begins with Cabernet Sauvignon pomace and double distills it for a cleaner, smoother spirit.

Then comes the honey. Florida orange blossom honey and a touch of natural honeycomb are infused in, softening the edges into gold while the grape character holds firm underneath.

Italian in spirit, handcrafted in Florida by C & C Distillery of Miami, and finished with a red wax seal pressed by hand.

After dinner

An Italian Digestif, Made in Florida

Grappa is the drink Italians reach for when the plates are cleared. Here is what that means, and how to pour it.

The short answer

What a digestif is

A digestif is a spirit poured after the meal rather than before it. Where an aperitif is light and made to open the appetite, a digestif is stronger, warmer and meant to close things down. In Italy that role has belonged to grappa for centuries.

Aperitif or digestif

Which one is grappa

Grappa is a digestif. It is distilled from grape pomace, bottled at strength, and served in a small glass at the end of dinner. Papa's sits at 45.5% ABV, so a pour of one ounce is plenty.

How to serve it

After dinner, three ways

Neat at room temperature, chilled from the freezer, or poured over the last inch of espresso the way Italians drink a caffè corretto. The honey makes all three easier for a first-time drinker.
